Upvas Handvo

Handvo is a Gujarati delicacy and I have already shared a recipe with millet. But this one is completely different from the previous one. This recipe comes from my friend Harsha Sangrajka who is an excellent baker by profession. Thanks Harsha for sharing such a wonderful Upvas delicacy.

Ingredients:

  • 1 Cup Little Millet/Samai
  • 1/4 Cup Sago/Sabudana
  • 3/4 Cup Curd
  • 1/2 Cup Water
  • 3/4 Tsp Salt
  • 3 Finely Chopped Green Chillies
  • 1 Tbsp Grated Ginger
  • 1/2 Cup Grated Watermelon Rind or Bottle gourd
  • 1/2 Cup Grated Carrot
  • 1/4 Cup Chopped Coriander Leaves
  • 1 Tbsp Oil
  • 1 Tsp White Sesame seeds
  • 1/4 Tsp Eno

Directions:

  1. Mix millet and sago and make a fine powder. Add curd, water and allow it to ferment for 6 hours.
  2. Add salt, grated veggies, coriander leaves, ginger, chopped chillies and mix well. Divide the batter into two portions. Add 1/8 tsp of Eno to one portion and mix well.
  3. Heat a tawa and once it is ready, add a tsp of oil and splutter 1/2 tsp of sesame seeds. Now keeping the heat on low, pour the Eno mixed batter and spread to form a thick circle. pour some oil from sides.
  4. Cover with a lid and allow it to cook till the bottom portion turns crisp and the top portion gets steamed well. Now flip the handvo and cook till the other side also till it become crisp.
  5. Once ready, cut into 4 pieces and serve it along with chutneys and curd. Repeat the same procedure for the other other portion.
