Ragi Mudde is a wholesome food of Karnataka, often served with Huli. The traditional method involves some expertise and making a soft mudde is a tedious procedure. But not any more!
Ingredients:
- 1 Cup Ragi Flour
- 1 Cup Water
- 1/2 Tsp Salt
- 1 Tbsp Oil
Directions:
- Make ragi dough. Please go through my 'Millet Roti' post for a detailed procedure for making the dough.
- After resting the dough for 20 minutes, add oil, knead briefly and make tennis ball size balls.
- Place these balls in a vessel and steam them for 10 minutes on medium heat.
- Excellent Muddes are ready. Serve with huli/sambar.
Can hand pounded raagi flour be used for mudde? Outside layer was hard but inside was very soft inside…

Hand ponded flour will be more fiberous and it may need more water. I have not used it, you can try.
