Kokum is a summer fruit which is power-packed with so much nourishment.It eases acidity and improves digestion. It has anti oxidants which helps in controlling diabetes and weight loss. It cools the body and prevents dehydration. Kokum is packed with many essential vitamins such as vitamin A, vitamin B3, vitamin C and minerals such as calcium, iron, manganese, potassium and zinc. Try this simple puliyohara recipe and enjoy its health benefits.
Ingredients:
- 2 Cups Cooked and cooled Millet
- 8 Grams Kokum
- 1 Tbsp Sesame Oil
- 2 Tbsp Roasted Peanuts
- 3 Red Chillies
- 6 Black Pepper Corn
- 1 Tsp Coriander Seeds
- 3/4 Tsp Urad Dal
- 1/2 Tsp Chana Dal
- 1/2 Tsp White Sesame seeds
- 1/2 Tsp Jaggery Powder
- 1/4 Tsp Fenugreek Seeds
- 3/4 Tsp Salt
- 1/2 Tsp Mustard Seeds
- 1/2 Tsp Urad Dal
- 1/4 Tsp Asafoetida Powder
- A few Curry Leaves
Directions:
- Spread the cooked and millet in a wide bowl. Soak kokum in water for 10 minutes.
- Heat a pan and dry roast sesame and fenugreek seeds. Remove.
- Add oil and roast urad dal, coriander seeds, Chana dal, black pepper and red chillies. Now powder everything along with squeezed kokum, salt and jaggery powder.
- Add a tsp of oil in a pan and do the seasoning. Once done, transfer the spice powder to the pan mix with the seasonig.
- Add this to the millet. Give a good mix of everything. Finally add roasted peanuts. Kokum puliyohara is ready to serve.
Note:
- I used Little Millet for this recipe. Other millets like Barnyard, Kodo, Foxtail can be used.
- Increase/decrease spice level according to individual taste.
