Cup cake

A Cup cake is a small cake designed to serve one person. Kids love the cute small cup cakes more! Today I am sharing the recipe of ragi cup cake which I baked recently. They are soft, moist and healthy ones! 

Ingredients:

  • 1 Cup Ragi flour
  • 1/2 Cup Wheat flour
  • 3/4 Cup Organic Jaggery Powder
  • 1/2 Cup Milk
  • 1/4 Cup Coconut oil
  • 1/4 Cup Curd
  • 1 Tsp Vanilla Extract
  • 1 Tsp Baking powder
  • 1/2 Tsp Baking soda
  • 2 Medium size ripe bananas

Directions:

  1. Sieve flours, baking powder and soda together thrice.
  2. Mash the bananas well.
  3. Add oil, milk, curd, jaggery powder, vanilla extract to the mashed banana and mix them well.
  4. Now, add the sieved dry ingredients in batches to the wet ingredients and fold without lumps.
  5. Add a few tsp of milk if required.
  6. Pre heat the oven to 200 deg C. Pour the batter in the greased cup cake try with the help of an ice cream scoop.  Tap the tray to remove air.
  7. Bake for 20 minutes. Just before removing, give milk/ghee/butter wash on top to get the glossy look.
  8. Remove the cakes from tray after 10 minutes.
  9. For this measurement, we get 12 medium size cakes.

  1. trying to recreate this as a vegan recipe. wondering if orange juice is a good curd substitute.. what do you think?

      I took medium size indian bananas. It’ll be approximately 3/4 cup after mashing.

    Can we use any other oil other than coconut oil for this? Never used coconut oil so not sure if everyone will like the taste…

      You can use any oil of your choice. I use coconut oil because it is healthy!

    Is there a way to make this cake as a steamed cake? I don’t have oven, hence the question.

    1. Hi Uthra,
      I’ve not tried this recipe by steaming. You can go through cake posts in the group and follow theose procedures. For cakes, i prefer only baking. You can use your cooker as an oven by putting salt or sand at the bottom, once heated keep a stand over that and place the batter vessel. Close the lid without the gasket and bake on low heat for 30 minutes. This will give excellent cakes.

      Bananas give rich flavour and helps to get soft and moist texture. Please do try once. I’m sure, you’ll like the cup cake.
