Banana Bread

Banana bread is a type of bread made from mashed bananas. It is often a moist, sweet, cake-like quick bread. This banana bread recipe is soft and delicious. This recipe is vegan, gluten free and refined sugar free. Try this healthy bread and enjoy as a tea time snack.

Ingredients:

  • 2 Cups Jowar Flour
  • 6 Tbsp Organic Jaggery Powder melted in 2 tbsp water
  • 6 Tbsp Coconut Oil
  • 6 Tbsp Water
  • 3 Ripe Bananas
  • 2 Tbsp Choco Chips
  • 2 Tbsp Sunflower Seeds
  • 1 Tbsp Flax Egg (1 Tbsp ground flaxseed mixed with 3 tbsp water and kept for 15 minutes)
  • 1 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1/4 Tsp Salt
  • 1 Tsp Vanilla Extract

Directions:

  1. Preheat the oven at 180 degree Celsius.
  2. Roast the jowar flour on low heat for 5 minutes to remove the raw smell.
  3. In a wide mixing bowl, mash the bananas with a fork. Add jaggery syrup, oil, flax egg, water, vanilla extract and whisk to combine everything well.
  4. Add baking soda, baking powder and salt to jowar flour and sieve thrice.
  5. Mix the dry ingredients with the wet ingredients in batches and fold the batter with a spatula. Make sure there is no dry flour left. Add chocolate chips.
  6. Line up a baking sheet in a small loaf tin. Pour the bread batter and even the top with a spatula. Sprinkle the seeds and gently press them. Make a small slit on top so that the bread bakes well.
  7. Bake for 55 to 60 minutes. Do a toothpick test and once it comes out clean, remove and allow it to cool down. Cut it in to small pices and serve along with evening tea.

Note:

  • Can increase jaggery for more sweetness.
  • Can add honey/maple syrup instead of jaggery.
  • Sugar can also be added.
  • Roasting removes the raw smell. So do not skip this step.
